Creamed Pearl Onions

INGREDIENTS

  • 2 cups Pearl onions, peeled
  • 2 cups Stock, chicken or vegetable
  • 1 ½ tsp Sugar, white
  • ½ tsp Salt
  • cup Heavy cream
  • 1 tbsp Chives, minced
  • To taste Salt
  • To taste Black pepper, freshly ground

METHOD

  • In a medium pot, combine onions, stock, sugar and salt. Simmer until all liquid has evaporated and onions are tender.
  • Add cream and cook until thickened. Stir in chives and season with salt and black pepper.

NOTES

  • To save time, buy pre-peeled, frozen pearl onions
