- 2 cups Pearl onions, peeled
- 2 cups Stock, chicken or vegetable
- 1 ½ tsp Sugar, white
- ½ tsp Salt
- ⅔ cup Heavy cream
- 1 tbsp Chives, minced
- To taste Salt
- To taste Black pepper, freshly ground
- In a medium pot, combine onions, stock, sugar and salt. Simmer until all liquid has evaporated and onions are tender.
- Add cream and cook until thickened. Stir in chives and season with salt and black pepper.
