  • 180 grams dates
  • 360 millilitres honey
  • 60 grams pecans
  • 60 grams dried apricots
  • 250 grams rolled oats
  • 30 grams sunflower seeds
  • 120 grams unsweetened shredded coconut
  • 20 grams chia seeds
  • vegetable oil

Heat your oven to 350 ̊F. Remove and throw away the pits from the dates, then put the dates in a small saucepan with the honey. Bring to a boil then blitz in a blender until you have a smooth paste. Leave to cool.

Roughly chop the pecans with a large knife, then chop the dried apricots. Put the oats, pecans, apricots, sunflower seeds, coconut and chia seeds into a mixing bowl and add the date paste. Mix everything together really well.

Line a 9” square baking dish with parchment paper and brush it with a small amount of vegetable oil. Pour the mixture on top, pressing it into the corners and making sure it is basically flat on top.

Put the tray into the oven for 40 minutes until lightly brown on top, then remove the tray from the oven and leave to cool completely. Cut into bars.
