Think of this Indian condiment as a spice extinguisher. We think that grating the cucumber provides great texture but prepare to your preference.

INGREDIENTS

  • ½ cup Yogurt , plain
  • ½ cup Cucumber , seeded, chopped
  • 2 tbsp Cilantro , chopped
  • 2 tsp Green onion, chopped
  • ¼ tsp Coriander, ground
  • ¼ tsp Cumin , ground

METHOD

  • Mix all ingredients in a medium sized bowl. Season to taste with salt. Chill raita, covered, until ready to serve. 

NOTES

  • Add any other seasonings you wish
