Kale Caesar Salad

The key to this recipe is massaging the kale leaves. Tuscan kale is recommended, but any kind will work.

INGREDIENTS

  • ¼ cup Lemon juice
  • ¼ cup Parmesan cheese, grated
  • 2 tbsp Olive oil, extra virgin
  • 1 tbsp Anchovy paste
  • 1 clove Garlic, minced
  • 1 tsp Dijon mustard
  • 8 cups Kale , shredded
  • To taste Salt
  • To taste Black pepper, freshly ground

METHOD

  • In a medium bowl, whisk together lemon juice, Parmesan cheese, olive oil, anchovy paste, garlic, and Dijon mustard.
  • Add kale and massage until tender, about 1 minute.
  • Taste for seasoning and add salt and black pepper to taste.
