- ¼ cup Lemon juice
- ¼ cup Parmesan cheese, grated
- 2 tbsp Olive oil, extra virgin
- 1 tbsp Anchovy paste
- 1 clove Garlic, minced
- 1 tsp Dijon mustard
- 8 cups Kale , shredded
- To taste Salt
- To taste Black pepper, freshly ground
METHOD
- In a medium bowl, whisk together lemon juice, Parmesan cheese, olive oil, anchovy paste, garlic, and Dijon mustard.
- Add kale and massage until tender, about 1 minute.
- Taste for seasoning and add salt and black pepper to taste.
