- 2 medium Cucumbers
- 2 cups Greek yogurt, plain
- 3 cloves Garlic, minced
- 2 tbsp Olive oil , extra virgin
- 1 tbsp Dill , fresh, chopped
- 1 ½ tbsp Lemon juice
- to taste Salt
- to taste Black pepper , freshly ground
METHOD
- Peel cucumbers; remove seeds with a spoon. Grate cucumber using the large side of a box grater, then squeeze to drain excess liquid.
- In a food processor or using an electric hand blender, combine cucumber with yogurt, garlic, olive oil, dill, lemon juice, salt, and black pepper. Blend until smooth.
- For best flavor cover and refrigerate for at least 1 hour before serving.
