Tzatziki Sauce

This tangy, creamy Tzatziki sauce adds fresh flavor to Souvlaki, Greek salad and crudités.

INGREDIENTS

  • 2 medium Cucumbers
  • 2 cups Greek yogurt, plain
  • 3 cloves Garlic, minced
  • 2 tbsp Olive oil , extra virgin
  • 1 tbsp Dill , fresh, chopped
  • 1 ½ tbsp Lemon juice
  • to taste Salt
  • to taste Black pepper , freshly ground

METHOD

  • Peel cucumbers; remove seeds with a spoon. Grate cucumber using the large side of a box grater, then squeeze to drain excess liquid.
  • In a food processor or using an electric hand blender, combine cucumber with yogurt, garlic, olive oil, dill, lemon juice, salt, and black pepper. Blend until smooth.
  • For best flavor cover and refrigerate for at least 1 hour before serving.
