- 1 1/2 cups all-purpose flour (180g)
- 1/2 cup whole wheat flour (56g)
- 1 tsp salt (6g)
- 1 1/2 tsp baking powder (6g)
- 3/4 cup sugar (149g)
- 2 eggs
- 3 very ripe bananas, mashed (about 1 cup)
- 1 tsp vanilla extract (4g)
- 1/2 cup grated dried unsweetened coconut (50g)

Heat the oven to 350°F (180°C). Grease a 9- by 5-inch loaf pan with butter.
Mix together the flours, salt and baking powder. With a hand mixer or a whisk, cream together the butter and then beat in the eggs and bananas. Stir in the dry ingredients; stir just enough to combine (it’s fine if there are lumps). Stir in the vanilla and coconut.
Pour the batter into the loaf pan and bake for 45 to 60 minutes, until nicely browned. A toothpick inserted into the center of the bread will come out fairly clean when it is done. Cool on a rack for 15 minutes before removing from the pan
